The compliments went on and on during and after our wedding about the uniqueness of Chef Horton’s cooking savvy and creative presentation. As a foodie and a former public relations representative for restaurants at the following Leading Hotels of the World such as Hotel Bel-Air, The Ritz-London, The Merrion-Dublin and Hotel Le Bristole-Paris, I have never seen a young yet poised and humble talent in a chef as that which Chef Adam Horton possesses.

It is rare to have a Chef be open to altering a dish to your liking or put the time into really thinking about how best to accommodate your palate. The chefs I have worked with have one way of preparing their menu and food, and it is their way. From the minute I met Chef Horton, I felt like I was part of his kitchen…he and his staff became part of our wedding party and part of our celebration from day one. His dishes transport you to a smoky, rustic old-world lodge. He defies the stereotype of most restaurants: “great atmosphere – poor food”. Saddle Peak Lodge: “great atmosphere – exceptional food”! His recipes are comforting, fresh, seasonal and inventive. My husband is from Texas and has had his share of wild game and said he has never had Elk or Bison like that which Chef Horton prepares. We had our wedding tasting during the end of Summer early Fall and fell in love with the sauces for the entrees we chose. In fact, we enjoyed them so much we were worried how the change in season may affect the dishes. Our wedding came around, and sure enough Chef Horton exceeded our expectations with sauces that were as scrumptious as the cozy, warm feeling you get sitting by the fire on a rainy evening at Saddle Peak. They were savory and each bite was a culinary experience in itself.

We also shared with Chef that we wanted to serve a late-night snack and wanted to let him run with it. The hit of the evening was not the mini bundt cakes I had brought in…it was Chef’s truffle mac n’ cheese balls and wild game mini corn dogs. Wedding blogs have been calling my photographer and coordinator asking for more information about the Saddle Peak Lodge Chef’s secret late-night snacks.

I have no doubt that Chef Horton will continue to raise the bar in the culinary world. He also has an inherent sense of who he is and I surmise that he will excel while maintaining his humble charm. He will not only be your Chef, he will become an ongoing memory for you if you choose to become a recipient of his creations.

All Brides To-Be,

Nicole Goddard came highly recommended by my wedding planner, Kelly Demaray. Know that I was the bride who wanted a photographer who was someone that would fit with our personality and be someone that wanted to be part of our wedding party. I was also seeking someone who would not try to take advantage of me as so many do in the wedding industry. I knew what I wanted: (a) to not see my fiancé for the first time until I walked down the aisle (2) no photo album and (3) no enlarged prints.

The first time I met Nicole it was like meeting with an old friend. I have never met anyone so passionate about their profession. When you first meet Nicole you feel like you have known her your entire life. She is on it! Nicole scoped out the location beforehand and even our “play around” pictures turned out good (see the first picture in the sequence above). When we went to our reception venue, the manager shared that there had not been one photographer who had been able to secure a good picture in their particular venue. Nicole took the initiative to ask their permission to properly set up the lighting to ensure that we had the highest quality pictures. Most people would have used this as an excuse to be lazy and just get paid. Not Nicole!

The day of our wedding Nicole was most impressive. She has a way of being direct while being courteous and fun. Our wedding videographer shared that he was most impressed by her. My Mom repetitively said, “Your wedding photographer is the sweetest girl and I hope that you are in touch with her for the rest of your life, she is wonderful”. Nicole takes whatever is in store for the day whether it is rain, shine, clouds and/or family situations and makes it work. She is the consummate professional and has an eye for love, fun and intimacy. Your personalities will shine through your pictures with Nicole’s work.

After seeing Nicole’s work, I knew what I wanted (a) to see my fiancé in an intimate setting before the ceremony (b) a photo album made by Nicole and (3) an enlarged photo stretched on canvas.

Nicole will always be a part of one of the most special days in our lives and we recommend you invite her into your family on your wedding.

All Brides To-Be,

Walter Pawluk came highly recommended by my wedding planner, Kelly Demaray. I declined my planner’s referral and shared with her that we were paying for our own wedding and felt that a photographer would be enough. As the months passed and I gathered pictures of my family and my Dad who recently passed, I realized it would not be fair to our future children to not document our wedding via video especially considering the age of technology we live in. Therefore, I decided to only cover the ceremony. My fiancé and I fell in love with Walter’s website and his sample videos. It was obvious he put together a mini movie that captures the day, the personalities, and the uniqueness of each family member. He didn’t do the cheesy interviews and he caught sincere moments that only someone behind the scenes that had an inherent sense for recognizing something special could capture.

As our wedding neared, I was so impressed with Walter and his follow-up that I extended his video services to the arrival of our reception location. I must admit, I was completely blown away by the amazing job that Walter did for us. Not only did we purchase a video but we worked with Walter to create separate video that we used as a thank you to send all of our guests. It was witty, thoughtful and unique. We received an overwhelming response from all of the recipients that this was one of the best wedding thank yous they had ever received. It also gives us another special memento from our wedding day.

Beyond referring Walter to any bride or groom looking for a videographer, I would also highly emphasize splurging and making sure you hire Walter to cover your entire wedding from getting ready to all of the speeches. We regret that we did not take his advice and do so.
