I never got to meet Elsy in person however we exchanged a few e-mails to decide, decoration, colour, flavour, how many people the cake was going to be. When we arrived in Cartagena, we went to one of her stores and we tried the cakes. We chose half and half, white cake with arequipe (milk caramel) and cointreau sirup and red velvet. We didn't try the red velvet in her store, this cake is made with yogurt and it is not always available.
Overall, everyone loved the cake, it was very soft and smooth.
