We had Pecos Bill provide a roasted pig for our wedding reception. He is known as a local barbeque guru, and we'd had his bbq chicken before this. The roasted pork was EXCELLENT! And we had leftovers to freeze. We had 140 people to feed, and got a pig with a dressed weight of 185 pounds.
We set up the date/commitment with Bill sometime in January or February for our September wedding. I don't think he is the kind of guy who usually plans this far ahead in advance...but would contact us as needed. He is best reached by phone, and what you see/hear is what you get! He's a little rough around the edges, but a good guy who knows his barbeque.
Bill was there to set up the roaster the day before our wedding and reception. He also picked up the pig from us that we got because we wanted a free-range pig that had no growth hormones (a "happy" pig- got it from The Kuhn Family Farm in Troy/Columbia Crossroads, PA). I'm sure Bill could get a pig locally so the client wouldn't have to worry about that.
The pig roasted on charcoal from around 2 AM until 7 PM- about 15 hours. Bill cut it all up, put sauce on half, and gave it to our other caterer, who presented it in the tent. Our guests were crazy for it! We set up the rest of the menu to be a dressed-up version of picnic food. We had a red, white and blue potato salad, asparagus salad, tomato with mozzarella and basil, and a delicious pasta salad. All of our food was made fresh right there on site, and I'm getting hungry just thinking about it! I would definitely recommend Pecos Bill if you're interested in good bbq.
